Our Chef-Patron Eliot\u2019s <strong>Chicken Katsu Curry<\/strong> is a favourite in the <a href=\"https:\/\/bookings.alacer.cloud\/The-Carlton-Hotel\/restaurant\">Brasserie<\/a> and can easily be adapted to use your Christmas turkey. Packed with warming flavours, crunchy textures, and a vibrant Asian Slaw, this dish turns leftovers into a culinary treat whilst preventing <a href=\"http:\/\/www.ilfracombecarlton.co.uk\/blog\/surplus-food-waste-initiative\/\">food waste<\/a>.<\/p>\n<p>Read on for the full recipe and tips on making it your own with leftover turkey or even vegetarian alternatives.<\/p>\n<h2>Chicken Katsu Curry Recipe<\/h2>\n<p><strong>Serves:<\/strong> 4<\/p>\n<h3>Ingredients<\/h3>\n<h4>For the Chicken<\/h4>\n<ul>\n<li>500g chicken breast or thigh, skin off<\/li>\n<li>1 free-range egg, beaten<\/li>\n<li>50g plain flour for coating<\/li>\n<li>100g panko breadcrumbs<\/li>\n<li>300ml vegetable oil for frying<\/li>\n<\/ul>\n<h4>For the Curry Sauce<\/h4>\n<ul>\n<li>1 tbsp vegetable oil<\/li>\n<li>1 medium onion, finely chopped<\/li>\n<li>2 bulbs fresh garlic<\/li>\n<li>2cm fresh ginger, peeled and grated<\/li>\n<li>1 tbsp medium\/mild madras curry powder<\/li>\n<li>100g plain flour<\/li>\n<li>200ml chicken stock<\/li>\n<li>15ml soy sauce<\/li>\n<li>15ml honey<\/li>\n<\/ul>\n<h4>For the Asian Slaw<\/h4>\n<ul>\n<li>2 medium carrots, peeled and julienned<\/li>\n<li>\u00bd red onion, finely sliced<\/li>\n<li>\u00bc red cabbage, finely sliced<\/li>\n<li>25g fresh coriander<\/li>\n<li>15g fresh mint<\/li>\n<li>1 red chili, deseeded and finely diced<\/li>\n<li>1 tsp sesame seeds<\/li>\n<\/ul>\n<h4>For the Asian Slaw Dressing<\/h4>\n<ul>\n<li>25ml soy sauce<\/li>\n<li>10ml honey<\/li>\n<li>2g sea salt<\/li>\n<li>5g black pepper<\/li>\n<\/ul>\n<h4>To Serve<\/h4>\n<ul>\n<li>240g basmati rice<\/li>\n<\/ul>\n<h3>Method<\/h3>\n<ol>\n<li><strong>Prepare the Rice:<\/strong><br \/>Rinse the rice if necessary and cook according to packet instructions. Use two parts water to one part rice, simmering until tender. Keep warm once cooked.<\/li>\n<li><strong>Make the Asian Slaw Dressing:<\/strong><br \/>Combine soy sauce, honey, sea salt, and black pepper in a bowl or blender. Set aside.<\/li>\n<li><strong>Prepare the Slaw:<\/strong><br \/>Mix julienned carrot, sliced onion, and cabbage. Leave the fresh herbs and chilli for later.<\/li>\n<li><strong>Make the Curry Sauce:<\/strong><br \/>Heat vegetable oil in a pan. Add onion, garlic, and ginger, cooking until softened. Stir in curry powder and flour, cooking for 3-4 minutes. Gradually add chicken stock while stirring, scraping the bottom of the pan. Stir in soy sauce and honey. Keep the sauce warm.<\/li>\n<li><strong>Prepare the Chicken:<\/strong><br \/>Flatten the chicken with a rolling pin under cling film for even cooking. Pane the chicken: coat in flour, dip in egg, and coat with breadcrumbs.<\/li>\n<li><strong>Cook the Chicken:<\/strong><br \/>Heat oil to 180\u00b0C in a deep pan. Fry the breaded chicken for 5 minutes, turning to ensure even cooking. Drain excess oil on kitchen paper.<\/li>\n<li><strong>Assemble the Dish:<\/strong><br \/>Dress the slaw with herbs, chilli, and sesame seeds. Plate the rice, ladle curry sauce over the top, and place the chicken on the rice. Drizzle more curry sauce and garnish with fresh herbs and chilli as desired.<\/li>\n<\/ol>\n<h2>How to Adapt for Turkey Leftovers<\/h2>\n<p>Using leftover turkey? Skip the chicken steps entirely. Simply slice your cooked turkey into bite-sized pieces and add them to the curry sauce during the final 5 minutes of cooking. Saunton Sands employs\u00a0easy to follow zoning sections where just the car park and first 5 minutes of your stroll requires that your dog is kept on the lead. \u00a0From here you have the next 3.5 miles of golden sands to explore and enjoy with your four legged friend.[\/vc_column_text][vc_column_text]\r\n<h1><span style=\"color: #2189cf;\">Hillsborough Nature Reserve<\/span><\/h1>\r\nKnown to the locals as 'the sleeping elephant', Hillsborough Nature Reserve offers a short but testing walk for you and your dog. \u00a0This dog walk takes you past beaches which are also dog friendly so offers plenty of opportunity for a run and a dip in the sea for both of you - especially welcome during those warm summer months! The views provided by this dog walk are glorious - a bird's eye view of Ilfracombe, out to Lundy Island and even as far as the South Wales coast. \u00a0There is so much for nature lovers to enjoy along the way too with an array of wildlife and their habitats to be seen.[\/vc_column_text][vc_column_text]\r\n<h1><span style=\"color: #2189cf;\">Baggy Point<\/span><\/h1>\r\nAs well as providing a dog friendly route, Baggy Point is also an easy access route which is especially important in opening up our beautiful countryside walks to as many people as possible. \u00a0Considered an easy route, Baggy Point lends itself to those pups who cannot manage a challenging route but still enjoy the great outdoors. \u00a0It is also considered equally good for young children.
